Plant Variety: Tomatillo (unsure of variety)

Days to harvest: 75-100 days

Season: Spring and summer

Sun Requirements: 6-8 hours of sunlight

Water Requirements: Around 1-1.5 inches of water per week, keep water moist

Planting notes: Seeds can be started indoors 6-8 weeks before final frost, need at least 2 plants for proper pollination

Preservation: Fresh eating, freezing, canning

Day 1: Transplanting

We were a bit late starting our seeds, so we purchased 3 tomatillo plants from a local nursery instead. The plants were likely around 10 weeks old by the time we planted them. All three tomatillos were planted in one bed, about 1 foot apart. We watered them daily and picked off the early flowers to encourage the plants to bush out more. This will help them to create more fruit later in the season.

Once the plants were large enough, we left the flowers to be pollinated. Around 30 days after transplanting, we noticed the first tomatillos starting to form. You can see a light, papery husk start to form around the pollinated tomatillos.

Preservation

We plan to use all of the tomatillos to can salsa verde. We’ll be using the Ball recipe for the salsa verde. More info coming soon!
